    i just made and ate this:
    buffalo chicken 0 carbs( chicken breast with franks red hot buffalo sauce) suicide ranch 1.5 carbs( 1T light buttermilk ranch dressing 1T franks red hot buffalo sauce)

    I made this last night for dinner. I wasn't specifically trying for low carb but it is.

    2 lb ground turkey
    2 boxes chicken broth (8 cups?)
    1 onion
    4 garlic cloves
    1 c chopped celery
    1 c chopped carrots
    1 carton of sliced mushrooms
    1 tblsp olive oil
    1 zucchini
    1 summer squash
    1 c of red/purple cabbage
    1 c of fresh spinach
    1/2 c of brown rice

    spices
    1-2 tsps curry powder
    a few shakes of parsley (or fresh if you have it)
    ground fresh black pepper
    1 tsp of red pepper
    1 or 1.5 tbsp of white pepper
    salt if you want

    Saute onion, garlic, celery, carrots and mushrooms in the oil until tender
    Saute the turkey separately until pink is gone
    Add turkey, broth and the rest of the ingredients and simmer for 40 minutes until the rice is done
    You could add the spinach at the end if you want it less cooked.

    it was peppery and yummy, filling, low calorie and low carb and healthy

    2 eggs
    2 pepperoni sticks
    2 mushrooms
    1/2 bell pepper
    soy cheese

    lunch

    2 cups of veggie lovers salad
    2tbsps of thousand island dressing
    crab
    2 slices of roast beef rolled up
    1/2 avacado

    Supper

    4.5oz pork tenderloin
    2 cups steamed broccoli and cauliflower.

    snack

    sausage
    radishes
    sugar free red bull
    1 cup chocolate almond breeze

    carb total = 72g

    Chicken breast stuffed with Boursin or a soft cheese like Philly, wrapped in bacon or prosciutto and baked in the oven, served with veg. Delish!

    Artichoke Lemon Dip Recipe

    Prep time: 10 minutes

    Add to shopping list
    Ingredients

    1 14-ounce (400 g) can of artichoke hearts, packed in water, drained
    1/4 cup chopped fresh parsley
    1/4 cup (25 g), packed, grated Parmesan cheese
    1 Tbsp lemon zest
    1 clove garlic, minced (about 1 teaspoon)
    1/2 teaspoon fresh black pepper
    1/4 teaspoon salt
    8 ounces (225 g) cream cheese, room temperature
    3 to 4 Tbsp lemon juice

    Method

    1 Put the drained artichoke hearts, parsley, Parmesan, lemon zest, garlic, and salt and pepper in a food processor. Pulse a few times until a paste forms. You should still be able to make out bits of parsley and lemon, so don't over-process it.

    2 Place the cream cheese in a medium sized bowl. Add the artichoke parsley mixture and the lemon juice. Stir until well blended. Add more salt, pepper, and lemon juice to taste. Garnish with a few fresh leaves of parsley or ribbons of lemon zest.

    Yield: Makes about 2 cups of dip.

    Serve with raw veggies!! Enjoy!!

    Homemade Boursin cheese


    2 garlic cloves
    8 ounces butter, at room temperature
    16 ounces cream cheese, at room temperature
    3 tablespoons grated parmesan cheese (the real stuff, and freshly-grated)
    1 tablespoon fresh dill, minced or 1 teaspoon dried dill weed, crumbled
    1/2 teaspoon dried marjoram
    1/2 teaspoon basil
    1/2 teaspoon chives
    1/2 teaspoon black pepper
    1/4 teaspoon dried thyme, crumbled
    2 tablespoons minced fresh parsley

    Directions:

    1
    Have cheeses and butter at room temperature.

    Crush garlic.

    Mix cheeses, butter and garlic.

    Add remaining ingredients, mix well.

    Pack into a container just large enough to hold the boursin and store in refrigerator.

    To serve, bring to room temperature.

    I saw on pinterest today a recipe for slicing and grilling zucchini then topping w/ a tad of pizza sauce and cheese and pepperoni. I will be trying this as we have zucchini coming out of our ears right now!

    193 calories for just ONE EIGTH of a 10" pizza crust WITHOUT ANY TOPPINGS? - can't see that helping anyone's diet very much even if it is low carb!!!

    Now that it's summertime in Ontario, I like simple things like bbq'd chicken thighs, lamb spiedini, sausages, burgers (skip the bun obviously or just eat half) and whatever veggie side (salad, asparagus, beets, pretty much anything goes here)
