we have a pop-up with microwave, slow cooker, and we may be able to do some grilling. last yr sometimes we couldn't because it was so dry- forest fire risk. we have a small fridge(in the pop-up), but it's not very reliable. we just put things like drinks in there.
keep the meat in a cooler till we need to cook it.

My mom will put a ham in the crock pot (slow cooker I guess) wrapped in tin foil (for easy clean up). Spaghetti is always a go-to, but it helps if I can read, that might not work well for you. Oh, my mom also has been known to cook up soup at home (either chicken wild rice or chicken noodle), keep it in the fridge/cooler, and then heat it up (on their stove, but would work in a microwave). She usually did that when we knew there would be at least one rainy day.

I just have a tent, so I cook via campfire, so things like burgers or hot dogs or sandwiches.

    Thanks :)

    Any more suggestions?

If it matters the weather will be sweltering hot.
we leave soon. Very humid and hot summers here.
I also will be making shredded chicken in the crockpot
But 1 pot will probably only last 1 dinner.

I do a lot of dutch oven cooking - just need charcoal, so low fire risk.lots of recipes for that.

With a grill, ribs would be a treat. I do baked potatoes and corn on the grill while camping too.

You can do a nice chilli that will last in the slow cooker.

I think I have more camping cookbooks than regular cookbooks. I don't really know where to start! What do you like to eat?

When we go camping we always have:
    Grilled Pizza
    Grilled cheese sandwiches
Chicken Teriyaki (you can make that in a slow cooker) with rice and coleslaw
Hot dogs with baked beans and fruit
    Cedar Plank Salmon
    Kabobs or Fajitas
