Baked Chicken Salad

[img]http://www.stacymakescents.com/wp-content/uploads/DSC_5451.jpg[/b] 2 cups chopped cooked white chicken 2 stalks celery, chopped ¼ cup chopped onion 3 pieces Ezekiel bread or Trader Joes Sprouted bread ½ cup 0% Greek Yogurt ¼ cup low fat sour cream 1 tablespoon Dijon mustard 2 tablespoons almond milk Salt and pepper to taste 2 tablespoons Parmesan cheese In a mixing bowl, combine chicken, celery, onion, and bread. Toss. In a small bowl, combine yogurt, sour cream, mustard, almond milk, and salt & pepper to taste. Stir yogurt mixture into chicken. Toss until coated. Pour into 8 inch greased baking dish. Bake at 375 degrees for 20 minutes. Yield: 3-4 servings Optional: add 1 cored and diced apple for a sweet kick. http://www.stacymakescents.com/baked-chicken-salad[/img]
