Polenta Recipes?

I am dying to try some Polenta. Anyone have any good recipes?

    I like creamy polenta so for an itaian dish I make:

    1 cup polenta
    3 cups almond milk
    1 tsp garlic powder
    2 tsp onion powder
    1 tablespoon low fat butter

    bring milk to boil adding butter to melt. add in garlic, onion powder and polenta. continue to stir until polenta is smooth. press between fingers to ensure it does not feel gritty. this takes about 10-15 mins on low heat.

    I then place chicken meatballs with homemade pasta sauce on the top of polenta and some steamed greens on the side.


    you can make a firmer version, so less milk, let it cool in a baking tray. it will become firm. slice into fingers and quickly fry off in lightly oiled pan. is lovely tossed in salad if you cut pieces about size of croutons

    -boil it in water+salt until it's thick
    -serve it with: sour cream, shredded cheese, butter, boiled eggs
    Not very low cal, but good.

    2)
    -boil in water and salt until it's thick
    -put a few tablespoons into a plate filled with cold milk

    - boil in milk and honney

    i like to cook my polenta in the rice cooker. i do 1 part polenta to 3 parts stock, then set the timer for about 20 minutes. i really like adding diced jalapeno and garlic to it at the beginning. then at the end i stir in some sharp cheddar cheese. really nice change from something like spanish rice if you're having mexican food :)

    I have had and made Polenta Lasagna. Just brown the polenta in a little olive oil and then layer roasted vegetables such as eggplant, zucchini and roasted red peppers. Marinara sauce and mozzarella or provolone cheese. Delicious!!!

    I love to cook polenta following the directions and then serve under dhicken cacciatore or something similar. Very good with a tomato sauce.

    Ingredients:
    4 cups vegetable broth
    1 cup corn grits (polenta)
    4 cups broccoli, very well chopped
    Salt and pepper

    Directions:
    1. Bring vegetable broth to a boil
    2. add the polenta in slowly, while constantly whisking
    3. stir in broccoli
    4. turn heat down to low, and let cook for 15 minutes, stirring often
    5. turn heat off, cover pot, and let stand for another 10 minutes, stirring occasionally.
    6. Add salt and pepper to taste. Serve hot.

    120 cals per 1/6 of recipe

    YUM! I added my husband's polenta recipe to my foods so I can eat it and eat it. :) This serves 8, 161 calories per serving. We like to cook up a sausage with sliced peppers and onions to put over it for a full dinner.

    Yellow Plain Cornmeal, 1.5 cup
    Butter - Salted, 3 tbsp
    Oil - Olive, 1 tablespoon
    Onions - Raw, 1 medium
    Knorr - Clear Chicken Broth, 8 cup
