*** BIGGEST LOSER PANCAKES ***

Biggest loser oatmeal & egg white pancakes. They say once you try these, you will never go back. tastes like French toast!


Ingredients:

6 egg whites
1 cup rolled oats, dry
1 cup cottage cheese
2 teaspoons sugar
1 teaspoon cinnamon
1 teaspoon vanilla

Instructions:

In a blender, blend all ingredients until smooth. Heat a griddle or large non-stick skillet over medium-low heat. Spray with non-stick cooking spray. For each pancake pour 1/4 cup of batter onto griddle. Flip when they start to bubble. Cook until golden brown. Repeat with remaining batches, spraying the griddle as needed. Makes about 10 pancakes.

    I love pancakes, but hate that they are typically so high in calories. However, I still love syrup too. haha!

    BTW, if anyone is using liquid egg whites 2 tbsp = 1 egg white.

    Sounds good except the cottage cheese....blech! I wonder if you could substitute Ricotta or Greek yogurt or something else?

    I make similar all the time. Don't be scared off of the cottage cheese. You don't taste it! Mine is like this:

    1/2 cup egg whites
    1/4 cup oatmeal
    1/4 cup cottage cheese
    1 tbsp. almond butter
    cinnamon to taste.
    Mix all in magic bullet or blender. I then add blueberries to the mixed batter. Pour in frying pan. Makes one large pancake (large frying pan size).

    I eat this several times a week for breakfast and it fills me up till lunch. No snacking! :)

    Every time someone says, "You can't even taste the cottage cheese." I try it and want to wretch. :sick:


    Cottage cheese is the reason that I thought I hated lasagna as a kid. Then I tried it at a restaurant and it was delicious. I found a recipe and made it myself. love, love ,love


    But I have always hated cottage cheese. It's the only dairy product that I dislike.
