Crustless Spinach Quiche Submitted by Lorinda Mayes Fleming
1 Tbsp. Olive Oil
1 onion, chopped
1 (10 ounce) package frozen chopped or 8 cups fresh, chopped
spinach, thawed and drained
1 1/4 c. Egg Beaters
2 cups shredded Mozarella cheese
1/4 tsp. salt
1/8 tsp. ground black pepper
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan.
Heat oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated.
In a large bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan.
Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.
(Try pouring into prepared cupcake pan for mini quiche. It is then 95 calories per mini)

I made this tonight with the following modifications - I used green giant frozen chopped spinach instead of fresh, 5 real eggs + 1/4 cup (about 60 mL) of fat free milk instead of egg beaters, kraft fat free mozzarella cheese, 2 tablespoons (30 mL) of olive oil rather than just 1, and baked the whole thing in the 8 inch cast-iron skillet that I had used for sautéing the veggies. The whole entire "pie" contained 1090 calories, 51 grams of fat, 34 grams of carbs, 72 grams of protein, and 14 grams of fiber. I assumed 8 servings, which would run (approximately) per serving 136 calories, 6 grams of fat, 4 grams of carbs, 14 grams of protein, and 2 grams of fiber. I hope this helps anyone who was wondering about serving size :flowerforyou:
