Apologies if this is a silly question - just wondering if anyone has any recipes with spring onion? I love it but usually find myself buying a bunch and wasting most of it because I don't know what to do with it! Thanks :)

    Salsa! any kind of tomato, red onion and spring onion, squeeze of lime, some coriander - fresh or dried, et voila!! this is what i make anyhow, often put it on low fat garlic bread slices for instant bruschetta! you can add mango/avocado also or there is a crab salsa recipe floating about!

    spring onions are also used in the Irish potato dish colcannon - or champ, mashed potatoes and spring onion mix :) hope that helps!

    oh I forgot to say I often use them up by chopping them up, frying until soft then adding a few eggs to make an omlette. Nice with some cheese!
