I've made this a couple of times, but never thought of adding beans. This is tasty and very filling. My new fave way to have this!
1 small head cauliflower - cut into florets, steamed
1 can White Kidney beans (no salt added) - rinsed
1 leek, chopped and sauteed until soft
1 tbsp extra virgin olive oil
3 garlic cloves (i like a lot of garlic - i added 4)
1/2 cup chopped cilantro
Once the cauliflower has been steamed and drained, throw all ingredients into a food processor and whiirrrrrrr. This yielded about 6 cups for me.
Per cup breakdown:
120 cals
18 carbs
3 fat
7 protein
6 fiber
2 sugar
Had to share! The beans really make it creamy. nom nom
