New favorite "salad"
I've made this with rice and quinoa. I found the original recipe I believe in the Flat Belly Diet book but I've personalized it more. I like to call it Edamame Salad.
1/4 dry quinoa or brown rice
1/2 c shelled edamame (you can buy them in the frozen veggie section out of the pods already. I buy SeaPoint Farms)
1 c frozen pepper stir fry (or you can cut up your own pepper. Today I made it with one green bell pepper, but red would be good as well. I've also seen mini peppers in a variety of colors that would be delicious as well)
2 T fresh salsa or Thai garlic chili sauce.
Put 1/2 c water into a small pan, add quinoa or rice, chopped peppers and edamame. Bring to a boil, reduce heat, cover and simmer for about 13 minutes. You may need to add 2/3 c to make sure the quinoa has enough to absorb while cooking. Spoon into bowl and top with salsa or chili sauce! Soooo yummy!!! Last week I made it with green beans, carrots and wax beans instead of the peppers and it was just as yummy. It's so healthy and colorful, makes me feel good!
Oh and filling!!!!
