Kid-friendly vegetarian meal ideas/recipes

So, my niece is coming to stay with me for a week, and I am stressing out over what to feed her because I am a vegetarian who is not cooking meat unless it is in some pre-packaged microwaveable dinner and she is a picky eater. I am wondering if people could suggest some kid-friendly, simple (as we'll be quite busy), vegetarian recipes that I could make. She is picky in that she won't eat a bean unless it is disguised, and she is finicky when it comes to many types of vegetables. She loves spice, but not really ethnic foods...though mexican and italian would probably be good, and she'll eat certain rice dishes. I'll also make eggs if there is a suggestion for them that I think she'll enjoy. We can do grilled cheeses and peanut butter sandwiches for lunch, but suppers are going to be tough. One night I'll do make-your-own pizza, but other than that, I'm at a loss. Please help!

While on a trip with my brother's family I made vegetarian tacos (using veggie burger crumbles in place of ground beef). My little niece loved it. Her mom commented that it was one of the rare times she's ever seen her clear her plate. The adults all loved it too. I think it's a pretty safe recipe
A lot of pasta dishes will probably work well too. You could also try things like pancakes for dinner, which a lot of kids tend to get behind.0 -
Does she like soup? I make tomato w/orzo, tortellini soup, potato soup, the kids never miss the meat, and I get in extra veggies. I know it's summer, but my kids love soup all year long. Alot of times I'll make it in the crockpot...
Pasta in general is good, either red or white sauce, or even evoo, garlic, parsley, and pine nuts is one of my kids' favorites that they ask for. Mine don't like pesto, but sometimes I make a sauce with cooked carrots and roasted red peppers and onions blended and coating the pasta; it's bright and I sprinkle parm and pine nuts on it. If she's older she might like a cold Asian pasta salad served with fruit...
Baked potato with Bacos, cheese, and green onions, served with a salad...
Mac and cheese can be a good centerpiece dish as well; my daughter just found a rice cooker recipe for that.
Some of these are heavier foods. When I'm making lighter foods, I will round out dinner with a small dessert; the kids are always up for that! I don't know how old your niece is, but I find kids can eat plenty of food without meat before thinking to question why something doesn't have meat in it.

Bean burritos
Grilled cheese
Pasta w/ cheese or red sauce (crumble some tofu into the red sauce and she'll likely think it's cheese) my grandson loves it.
Vegetarian lasagna
Pinto beans and cornbread (southern kids are raised on it)
Veggie cheese omelet, quiche or frittata
Stuff pasta shells w/ a mixture of spinach, ricotta and tofu and top w/ marinara (one of my daughters’ favorites)

I recently made veggie enchiladas with lentils that the whole family loved - another suggestion is to get her to help prepare the meal - my Mom used to make "sunshine potatoes" for my kids when visiting - (mashed potatoes with cheddar cheese on top designed as a smiley face.) Also pancakes can be "designer" - bears, bunnies. elephants, the kids always loved a "breakfast for dinner" night. Texas longhorns - Black olives with a carrot strip (horns) pushed through the hole. Check on line (lots of suggestions). Mac and cheese is fun - use a different pasta shape.0

I like to make a Szechuan Cold Noodle peanut salad that is great if there is no peanut allergy. Kids will usually eat roasted Kale as well, which I put out by a plate standing upright in an old fashioned glass and call them green potato chips. Crunchy, salty w/some kosher salt, delicious.0

Thanks for the suggestions everyone! (And I am open to more too, if anyone has them). She is 14, btw, but with very child-like, non-adventurous tastes. Like I said, she won't eat a bean, so that greatly restricts my options, but that veggie cheesy mac-and-cheese looks wonderful! Also I might try to make a soup too because she does love soup (her favourite canned version happens to be vegetable too!) I was also considering veggie lasagna one day...sauce is the perfect place to hide veggies and it is kid-friendly.
Also, I would love to have the recipe for those lentil enchiladas if you don't mind! They sound delicious for me! And lentils are smaller than most beans, so she might not have as big a problem with those anyway.0 -
Oh yeah, might give the tacos a try too. Only thing is, I am not a huge fan of fake meat...I found it has a weird taste and texture, and nasty after taste, but I can do some veggie burgers, so maybe I'll make my own ground meat with veggie burgers I like.0

You could do seitan instead of the soy meat crumbles in the tacos.
You could also just tell her to cook dinner one night. And breakfast for dinner is always the best dinner.0 -
Never tried seitan before...might have to check that out.
She doesn't know how to cook yet, so that is all on my shouldars for now.0 -
I eat a vegan diet and some of my favorite meals are vegetable spaghetti, veggie burgers and burritos. You could use rice and peppers/onions with no beans. Guacamole is great if that would work.0

i agree with pocketmole on the tacos. i have made them plenty a time with the meatless crumbles and meat eaters legit love it, with the taco seasoning it really just tastes like straight up tacos.
seitan is awesome, and good to use in place of something that would call for beef tips, chicken or really any other meat. it can be pricey in the stores, but if you have time before she comes you can buy some wheat gluten and make your own, then just package it and toss it together with whatever you would make with the meat. you can make a "philly cheese steak" with the seitan strips, peppers onion cheese on a wedge/roll, not sure how she is about stir frys but you can add that with veggies and a soy sauce or sweet n sour sauce over rice. pasta as well, using the meatless grounds you can make a hearty sauce with some veggies thrown in the sauce. pizza is a great idea. does she like quesadillas? a cheese quesadilla with some sauteed mushrooms onions peppers always hits the spot for me :]
sweet potato burritos from allrecipes.com, the beans in it are mashed so they aren't the shape of beans, it seems like a weird ingredient combo when you look it up but its actually really good!
spinach artichoke stuffed mushrooms using greek yogurt instead of mayo, cream cheese artichoke spinach parm cheese, mixed together stuff it in a huge mushroom cap or even a pepper and bake it with cheese on top. you can use this same mix and serve it with rotini and make a spinach artichoke pasta dish.
nachos? i loveeee some meatless nachos with lettuce cheese gauc sour cream tomato, you can layer them in a pan and bake it, i know you said you dont like the meatless grounds much so you can leave that out and just make it cheese with the toppings, add the guac and sour cream after baking top with salsa too and jalepenos, olives, hot sauce.

also, you could make something where maybe you make real meat on the side, like chicken and then she can have that in a quesadilla and just add it in, or throw it over pasta or even in a stir fry. i do that sometimes, usually i just make all veggie recipes and my dude eats them, but now and then i will use a small skillet and cook up chicken seperately, then just make a large pan of a stir fry or a pasta dish and he can add his chicken in, and i can add my little meatless seitan or tofu in mine0 -
Wow! Thanks for all of the suggestions! Yeah, I am thinking tacos might be a good idea after all, and I love quesadillas too. They might be a hit with her as well. We'll be going out a couple times, and with the make-your-own-pizza night I'm doing, I am far less panicked now about feeding this girl--Now that I have all these ideas for the remaining nights.0
