I did the calorie count without the grated parm cheese, so if you use it, add the necessary calories

4 4-oz boneless skinless chicken breast
1/4 cup Kraft Sun Dried Tomato Extra Virgin Olive Oil Dressing.
1 zucchini, chopped
1/2 cup thinly sliced red onion
1 cup halved cherry tomatoes
1 cup snow peas
2 portabello mushrooms
1 red pepper sliced
1/4 cup grated parmesan cheese

Heat non stick skillet on med-high heat. Add chicken, cover, cook 5-7 minutes (170 degrees) Transfer to platter, cover keep warm. Add dressing,zucchini, onions, pepper and mushrooms to skillet, cook over med heat for about 4 minutes or until veg is tender crisp, stir in tomoatoes and snow peas, cook another 2 minutes or until heated through. Top chicken with vegetable mixture and parmesan cheese if you're using it.

You could serve this alone as a main dish or add a side of brown rice to it..either way it's pretty darn tasty!
