Hi guys! I have another amazing recipe to share with all of you. For those who are not cabbage lovers... this just might turn you into one. This is a great SUPER low calorie side dish that helps me stay within my dinner calories.
Ingredients (to feed 4 people)
- 1/2 head of green cabbage cut into 4 medium size wedges
- 2 tsp chopped garlic
- pinch of ground pepper
- tablespoon of olive oil
-2 tbs minced white onion (optional for the onion lovers)
- sprinkling of bacon bits (optional - but adds great flavor)
Directions:
Preheat barbecue or oven to 375 degrees. Place cabbage wedges on pieces of tin foil. Drizzle equal amount of olive oil over each cabbage wedge, add ground pepper, garlic, onion and bacon bits on top. Then, wrap up in foil in the same way you would wrap a baked potato. Put in the oven on each side for 20 minutes (to brown both sides). These taste best when they have a nice crisp brown side to them.
These turn out to be about 70 - 90 calories per wedge (and the wedges are large). SO YUMMY! I was never a fan of cabbage until I made it this way. Now I substitute this for white potatoes.
