chicken marinade

Hey. I'm looking for some different marinades for chicken...preferably easy ones because I'm no master chef. Let me know what yours are.

    Sometimes I do a little Extra Virgin Olive Oil and some lemon pepper. I use this to marinate vegetables before I throw them on the grill, too.

    1. Rub with a tiny bit of EVOO, then sprinkle with salt and pepper, fresh lemon juice, and fresh parsley. Bake/grill and eat. <3

    2. Sweet Baby Ray's BBQ sauce

    4. Hot sauce and a packet of Hidden Valley dry ranch seasoning
  • Mmmm, honey garlic chickenk. You can either marinade it in this and then cook it how you like (grilled, baked, whatever), or you can actually just put it all in the crock pot with your chicken breasts on low 6-8 hours or high 3-4 hours.

    3 garlic cloves, chopped (I just use the SpiceWorld minced garlic in the little jars in the produce section)
    1/2 c soy sauce
    1/2 c ketchup
    1/2 c honey
    pinch of basil
    salt & pepper to taste

    Tandoori is good if you grill and you have all the ingredients. Plain yogurt, lemon juice, minced garlic, grated ginger root, cumin, coriander, cayenne, salt, cloves. Slash up some skinless chicken, marinade in this stuff for 4 hours, kind of leave a coating of it on the chicken, and cook over charcoal. Good stuff!

    Italian dressing is an easy one
    Lawry's makes some 30 minute marinades if you want any of those, they have a ton of flavors and that keeps it easy too

    Lemon Chicken Marinade:
    1/2 c. EVOO
    1/2 c. Fresh Lemon Juice
    2 T. Dijon Mustard
    Salt & Pepper
    Mix mustard and lemon juice together first with whisk, then mix in EVOO slowly, whisking as you add

    I use a processor to blend all the ingredients for a Cilantro Pesto and stick it in a gallon zip lock bag with the chicken overnight, then grill.

    Cilantro Pesto:
    1 cup Cilantro
    1 cup Italian Parsley
    3 Garlic Cloves
    1/4 cup Parmasean Cheese
    1/4 cup Walnuts
    1/4 cup Olive Oil
    Salt & Pepper

    Ginger Lime Marinade (for two 8-oz chicken breasts):

    Freshly squeezed juice from two limes
    ¼ cup honey
    1 tbsp apple cider vinegar or rice vinegar
    1 tbsp ginger paste (you can find this in the refrigerated section of the produce department)
    1 tbsp extra virgin olive oil
    2 tsp garlic powder

    Combine everything into a screw-top container and shake well to mix ingredients thoroughly.

    Pour into Ziploc bag container chicken breasts. Marinade overnight or for at least 4 hours in the fridge before cooking.

    You can either pan-fry the chicken breasts over the stove or grill them in the oven.

    Bring excess marinade to a slow boil in a small saucepan over the stove to make sauce. For a thicker sauce, mix 1 tbsp of cornstarch with the excess marinade in the screw-top container before boiling.

    Serve chicken breasts with sauce over rice, quinoa, or with plain baked sweet potato.

    Make delicious kebabs with equal parts honey, extra virgin olive oil and soy sauce and add chopped garlic. This chicken kebab marinade tastes delicious with pineapple, onion and green pepper

    I had bought some Paula Deen peach salad dressing and wife used it for marinade on some chicken breast. They turned out awesome.

    what is really good and super easy is buy the sugar free apricot preserves and mix that with canned chicken broth and Black Pepper and a pinch of salt cook that in a sauce pan....grill your chicken and then put that on top is yummy

    This isn't "healthy" but it IS so yummy when BBQed ...

    1 cup vegetable oil
    1 cup soy sauce
    1 can lemon lime soda
    1.5 Tablespoon galric salt
    4-6 chicken or turkey breasts

    Marinate several hours, drain, then grill

    I like to take the zest and juice of two lemons, two cloves of garlic, 1/2 t sea salt, 1 t onion powder, and 1t red pepper flakes. I use this for two bone-in chicken breasts, two whole legs or four boneless breasts or bone-in thighs. 20 - 30 minutes in the marinade, grill or bake and enjoy :D If I make rice, I strain the marinade and use half of it with the water cooking my rice and add celery, carrots, onions, and red peppers to my rice as it cooks.
