Eating lots but still can't reach my calorie allowance

I've got a calorie restriction of 1200 cal per day, but I'm a keen runner and burn between 400-500 cal per day doing so, I've lost 5 kilos so far but the weight loss has seemed to stop in the past week.
I eat really well, clean and regularly, I have oats for breakfast, huge salads for lunch and heaps of veges with tofu (sometimes chicken) and quinoa to help bulk things out. I also have a protein shake every day with yogurt and berries however I am told everyday that I'm not eating enough calories and i'm worried that my metabolism has slowed down and my weight loss has plateaued
I need some advice on ways in which to increase my caloric intake without having to eat bad/high fate/sugary food?
Thanks!

not that hard 2 tablespoons natural peanut butter is 210 calories, avocados, nuts, coconut oil add 1 tablespoon olive oil is 100 calories right there. whole grain breads. whole mil ypgurt and cheeses. How did you come to need MFP if you are a delicate eater? I t will be hard if you are eatimg mostly veggies with no added fats. The body needs some good fats.

MFP got me in the habit of eating more salads and veges etc and then I started running more and have just found it a little tricky to keep up with my exercise, thanks for your help :)
