Curry-Lime Stir Fry

I made this dish last night for dinner - it was delicious so I thought I would share my creation! It is tangy and sweet with a little bit of a kick!
(Serves about 4-6 people)
Ingredients:
2-3 boneless, skinless chicken breasts
1 medium onion - chopped
4 medium stalks of celery
1/2 orange, green yellow, or red bell pepper (whatever you like best)
1 tablespoon of chopped garlic
4 medium mushrooms
3 cups of spinach
1/2 of a lime
1 tsp of curry powder
pinch of garlic powder
pinch of pepper
Directions: begin cooking onion, chicken and celery together with olive oil in a large skillet on medium heat. When the onions and celery begin getting tender, add the bell pepper, garlic, and mushrooms (make sure you stir often so the veggies don't burn!). Add in spices (garlic powder, curry powder and pepper) and keep cooking on medium until veggies are completely tender and chicken is cooked through. Add spinach and continue cooking for 2 - 3 minutes and squeeze lime juice over entire skillet and stir.
This is great served with brown rice. I didn't add any sauce to the skillet since the flavors of the curry and lime are so powerful on their own. There is also a ton of substitutions you could make with this dish: if you aren't a fan of chicken, use shrimp. If you do not like some of the veggies in here, substitute for some other veggies. It is so versatile..

Sounds excellent. Going to try it but substituting boiled cabbage for spinach. Love raw spinach but not cooked.0
