    My most favorite dish:

    Parmesan Crusted Tilapia & less then 1 carb per serving with awesome protein. Even friends and family who don't care for fish ask for me to make this recipe!

    Awesome served with brown or wild rice and served with mixed vegetables

    I have started eating low carb recently, and have found pasta/rice subs a good way to go. So, if you take a courgette, cut off the top and bottom and use a potato peeler to cut long strips off it you will have a pasta alternative. Cooked cauliflower, lightly mashed will replace rice with most dishes. Dippy eggs? cut bacon into long strands, bake it in the oven until it is nice and crisp and dip away! :D

    Some ideas that come to mind:
    I like to use a spiralizer for zucchini or yellow squash and make spaghetti like strand out of the veggie. Can top it with protein of choice and various sauces. Also spaghetti squash is good for pasta replacement. (Remember there are carbs in veggies too, so check out the numbers first to see if they fit what you are looking for.)

    I eat a crap ton of eggs and egg whites in a varitey of ways - I like to make them sweet, and sometimes savory.

    My lunch this week is a bed of spinach topped with some egg salad and albacore tuna.

    You might also google Paleo or Whole30 friendly recipes. They tend to be lower carb.

    Currently, these are my favorite low-carb recipes. I've found that for me, it's best not to try and make subs for things like bread, pasta and rice. But I do love a great veggie recipe!

    Spinach & Mushroom Quiche

    2.5 cups baby spinach - finely chopped
    1 can mushrooms (you can use fresh but will have to saute them first)
    4oz swiss cheese - shredded
    4 eggs
    1c heavy cream
    salt, pepper, oregano, basil, garlic powder to taste

    Coat glass pie pan with cooking spray
    Mix spinach, mushrooms, cheese and spices and place in pie pan
    Beat eggs and cream together & pour over ingredients in pan, taking care to make sure everything is nice and wet
    Bake @ 375 for about 45 minutes or until eggs are set

    Cut into 6 slices, about 260 calories each and only 2g carbs.

    This makes a great breakfast quiche, reheats really well. You could also use other types of low-carb veggies or throw in some diced/shredded meat to make a nice lunch quiche.

    Roasted Cauliflower

    1 head cauliflower - cut into florets
    1/4 c olive oil
    1/4 c red wine vingar
    1t spice mix (whatever kind you prefer... I have a rosemary/garlic that is phenomenal with veggies)

    Coat 9x13 pan with cooking spray
    Pour olive oil, vinegar and spices into a bowl & stir to mix well
    Put cauliflower florets into oil mixture and stir to coat
    Pour cauliflower into pan & drizzle remaining oil mixture on top
    Bake @ 450 for 40-45 mintues

    Makes 4 services and is about 160 calories and 3g carbs

    My favorite is this:

    1 Chicken breast, diced
    1 tsp olive oil
    1/2 tsp taco seasoning
    1/4 red onion diced (optional, onions are sorta high in carbs depending on how strict you are being)

    Add ingredients to a skillet and cook until chicken is done. Then add 1/4 salsa and simmer until most of the water has cooked off. Scoop into a bowl and add 1/4 shredded cheese.

    That spinach mushroom quiche looks yummy!

    I am a low-carb vegetarian who can't have soy. There's a challenge. There's a lot of almond milk, cheese, and eggs in my diet, HA!!!

    I also bought a veggie spiralizer (http://www.amazon.ca/World-Cuisine-Tri-Blade-Plastic-Vegetable/dp/B0007Y9WHQ) to make zucchini "spaghetti". Best purchase ever!

    I was able to download for FREE 26 Low Carb Recipes. This site has a lot of different recipes for low calories, gluten free, low fate etc. and each recipe breaks down the nutritional value per serving.

    My husband and I try to have a side salad every night. When we start to get sick of them, I make a vegetable soup that is really awesome. Add whatever veggies you like but I add:

    cut up carrots
    a couple onions
    a couple stalks of celery
    cut up cabbage
    a can of petite diced tomatoes
    a large jar of V-8 juice (awesome flavoring!)

    I add those to a crock pot or cook them on the stove until the veggies are as soft as you like them. You can also add meat to the soup - I like left over pork roast. It is great as a whole meal or as a side for multiple days.

    We love it. It is easy too!

    I wish we had that here, stock cubes/stock pots are *so* high in carbs (full of sugar and/or flour), it's difficult to create a decent stock for soups if no homemade is available :ohwell:
