Microwave 140 cal chocolate protein muffin/cake
So this is an awesome recipe. It might vary a little bit if you use real egg whites instead of liquid cause I used liquid, or depending on the cocoa and stuff but mine turned out to be 140 and 14 g of protein! and it's SO good.
Mix all these ingredients together in a microwavable bowl:
2 Tbsp coconut flour (can substitute other kinds but coconut is the best and high fiber)
2 egg whites (or same amount liquid egg whites, 6 tbsp for me)
1/4 cup pumpkin puree (or some mashed banana, 3 tbsp applesauce)
1/2 tsp baking powder
1 tbsp unsweetened cocoa (I used hersheys special dark)
as much granular stevia or splenda or other 0 cal sweetner as you want to make it taste how you want
you can also add some chocolate chips or top it with frosting or cool whip or honey or something
so mix all this stuff together pat it down so it's flat maybe clean up the edges a little and microwave it for 2:30 to 4 mins (depends on how well done you want it to be and your microwave and stuff) on high. I did it for 2:30 and it wasn't like super firm but came out the bowl fine in 1 piece.
nutrition facts for my version:
140 cal
16 carb
3 fat
14 protein
2 sugar
Oh and it's huge, like bigger than my hand and really rich

Going to try this. I've made one similar without pumpkin, banana or applesauce and it was much too dry. I bet this does the trick! Thanks!0
