A good dressing made of coarse mustard, vinegar, and olive oil on parboiled green beans is great still warm or cold. I started with this recipe but adjusted it for what I had at hand. http://www.chow.com/recipes/29682-french-green-bean-salad
Pictured made with Trader Joe's haricots verts, parboiled and drained, tossed in a dressing of dried fines herbes, coarse lemon mustard, salt-packed capers, white wine vinegar, extra-virgin olive oil and freshly ground black pepper.
We'll have this tonight next to some homemade philly cheesesteaks with roasted red peppers and sauteed mushrooms on fresh from the oven rolls.
