Egg Salad Recipies

Hey everyone! Would you all know of any good egg salad recipies? I have one, but it's not exactly one of my favs.

boiled egg, feta, avocado and greens go really well together (I think).
You can add coriander, and chickpeas for more substance, yummy!0 -
2 large eggs
1 egg white
1 tablespoon Hellman's mayo
1 teaspoon French's Dijon mustard
= 250 calories
it is simple but I really like the taste of it...you can of course use light mayo and more egg whites if you are looking for a lower calorie count, but if I have protein and fat together it keeps me full forever so it is worth the slightly higher calories. I also don't eat bread and usually have egg salad as my afternoon snack so I'm not starving at dinner and overeat.0 -
i like to add egg white boiled with tomato onion cabbage fine choped with black pepper salt and soya seeds.......0

When you say egg salad what do you mean? A plate of something you can have for lunch - so a sliced hard boiled egg with leaves, tomatoes etc.?
Or an egg-mayo type dish you would use as a sandwich filling or baked potato topping?
if it's the latter - take one hard boiled egg, and one tomato about teh same size. In a bowl, using a fork and a sharp knife, chop and mix them all together. the juice in teh tomato will hold everything togather. Add salt and pepper to taste, some chopped green onions if liked.0 -

I always eat - 2x hard boiled eggs, tomatoes, salad, cucumber, sprinkle of chia seeds, and a tbsp of apple cider vinegar. It's delicious!0

my recipe is simple but SO good that I feel obligated to share
If I'm really feeling like indulging, this always satisfies me:
2 eggs
1 tbs hellman's olive oil mayo
1/4 cup lowfat cottage cheese
serve in a pita (I've been eating it in a brownberry italian herb pita)
the whole thing is @350 calories0 -
I like my egg salad like I like my deviled eggs.
I used to make one at work with:
2 hard boiled eggs,
a packet of fat free hellman's mayo (about a tbsp),
a packet of brown mustard (about a tbsp)
a packet of sweet pickle relish (about a tbsp)
and 1-2 packets of splenda/artificial sweetener depending on sweetness preference, oh and salt/pepper to taste.0 -
