Strawberry cookies with walnuts and white chocolate chips
I tried this recipe last night and it was excellent so I thought I would share.
Strawberry cookie with walnuts and white chocolate chips:
1 tsp vanilla extract
1/2 tsp baking soda
1/4 cup unsweetened applesauce
7 medium strawberries
1/4 cup honey
1/2 cup whole grain flour
1/2 cup oatmeal
1/4 cup egg beaters (or 1 egg)
1/3 cup white chocolate chips (I used the ghiradelli white chips)
1/3 cup walnuts
1. Hull (cut off the leaves) and mash the strawberries in a bowl.
2. In another bowl mix together the dry ingredients (baking soda, flour, oatmeal, white chocolate chips, and walnuts).
3. Mix the other wet ingredients (vanilla, applesauce, honey, and egg beaters) in with the strawberries until it is smooth.
4. Gradually mix the dry ingredients in with the wet ingredients and stir it into a smoooth mixture.
5. Heat oven to 350 degrees and spray a baking sheet with non stick spray.
6. Place the batter by the teaspoonful onto the baking sheet.
7. Bake the cookies for approximately 10-12 minutes or until a toothpick can be inserted into the cookies and it comes out clean.
This recipe made 20 cookies at 56 calories a piece.
