Any Vegans On Here?

I've recently changed my diet to a whole foods, plant based diet. "Engine 2" if you have heard of it. Anybody have success with it? I am 3 weeks into it and loving how I am feeling. I cut meat out of my diet 3 years ago (except the occasional fish) and decided to take the plunge to NO ANIMAL PRODUCTS. Also, with this diet I do not eat any extracted oils to cook my food either.
I'd love to hear any success stories. Or if you have questions, let me know.

Hi,
I've been vegetarian for years and just made the switch to vegan about 10 months ago.
I still find it relatively easy to track, one thing I found that helps is to upload my fave vegan recipes so that I know the cal/fat/etc. that I'm consuming.
There are also some great low fat vegan cookbooks (Happy Herbivore) that give you the nutritional value for each dish, which is also helpful.

I just started following a vegan diet about two weeks ago, and have been using this website for about 4 months. I love that a lot of recipes from vegan websites are already in the database! Makes life easier
My favorite vegan recipes I've tried so far are:
Breakfast: Overnight oats from Oh She Glows: oats, chia seeds, almond milk, mashed banana, diced peach, cinnamon, allspice, and powdered ginger. This was delicious.
Lunch: Vegan Summer Rolls with spicy peanut dipping sauce from The Kitchn (just subbed soy sauce for the fish sauce).
Dinner: Scrambled tofu with spinach (onions, garlic, coconut oil, silken tofu, spinach, salt, pepper and some red pepper flakes.) I also added a few mini heirloom tomatoes thrown in at the end.
Dessert: Healthy Cookie Dough Dip by chocolate covered katie
I'm loving trying new foods every day! I find recipes in the morning, shop during my lunch break, and cook right after work...it's been great to pass the time at a boring job!0 -
Hey, sounds like we're on a very similar path I started transitioning to a whole foods, plant based diet a few weeks ago, and then after reading several books/watching lectures/documentaries, I've decided to work towards a nutritional vegan diet (eating vegan, but not so much doing the lifestyle changes/AR stuff). I've eliminated all dairy, except for a bit of butter and cheese yet (and butter is about done now), and then eggs are down to 1-2 a week. I'll be keeping them in my diet until the farmer's market closes down this fall, since right now I'm getting local, free range chicken eggs for a good price and I like supporting the farmer (who happens to be a distant relative ).
My daily focus is-a giant green smoothie, some kind of whole grain or bean dish, a veggie/mushroom dish (salads, sauteed veggies etc) and then misc. things like seeds/nuts, olives etc. I still also have some non-whole foods once in a while and I'm fine with that for now, since I've made some pretty big changes already, in a very short amount of time. Was one of those books The China Study? Because I just finished that one and that's sorta why I'm doing the vegan thing.
I already ate 90% non-processed foods anyways, so it was really just a matter of getting out of the mindset that every dish needed chicken!0 -
I just saw Forks over Knives on netflix streaming and it blew my mind. I already ate primarily a whole foods diet but I am making the switch to a 95% plant based diet. My plan is to have a little dairy if a guest at someone's home for dinner or traveling. Not eating eggs will be hard for me but I already gave up red meat over 20 years ago. Luckily my husband is a vegetarian but he loves his dairy!0

Recently, I have been watching a lot of documentaries on Whole Food Diets + Veganism + Raw Foods + Holistics + Juicing and Cleansing. Forks Over Knives, Vegucated & Fat, Sick and Nearly Dead are a few of my favorites. I have not yet adapted a fully Vegan diet, but many of these expert opinions have turned me on to this type of lifestyle. I plan on making steps towards changing myself, for the better!0

I got a copy of The Engine 2 Diet about 2 months ago and from the moment I finished it I knew that was for me. There are a few things I still have to give up but I would say I am 95% on board with this way of eating.
Without "dieting" I have lost 8 lbs just by switching to this way of eating, and all of my blood tests and blood pressure are extremely good.0 -
