Eating too little Calories?

So, I have been calorie counting for a week now, and I have been finding I have been consistently eating too few calories.
Even without my calorie deficit from exercising (I do about an hour of Pilates a day - which equates to around 200 calories, plus various amounts of walking), I am nowhere near to hitting my calorie goal.
The problem is I am trying to eat healthy foods, only eating when I am hungry and stopping when I am full, but I have never eaten more than 1000 calories in a day (and yes, I am logging my calories correctly, and checking serving sizes).
I am worried about my body going into Starvation mode if I carry on like this, but it seems counter-intuitive to me to force myself to eat while I am not hungry.
Any tips on what could be happening with me?

If you open your diary would be helpful but it's not hard to eat 1200 calories. Quit thinking "diet" foods are what you need to eat. Full fat dairy, eggs, lean meats, nuts, peanut butter, oils, avocado are just a few things that will add up calories, are good for you and provide the nutrition you needs.0

You probably wont go into staravtion mode, but undereating for a long period of time will screw up your metabolism. Try prelogging to make sure you get in your calories and eat less "diet" foods.0

Hahaha 2 suggestions for peanut butter, and I am deathly allergic to Peanuts! I will try and find a replacement though!0

You may try handful of NUTS on daily basis having high calorie value, for ex. Almonds, Walnuts, Cashew, Pistachios etc.0

Avocados, raisins, other nuts if it isn't a nut allergy in general.... You can easily get the calories up with more calorie dense food.0

Can you drink Milk??? a glass of 1% Chocolate milk which would be 2 cups would get you 300 calories alone.... Best of Luck0

Add any calorie dense food to your diet, PB is great but that's out for you, try avocado, you can put them on or in just about anything, they are calorie dense but not overly filling and are loaded with good fats. Also consider things like chocolate milk, cottage cheese or even ice cream if you just need a few hundred cals but are not really hungry.
