Alfredo alternative

Hey everyone,
I made something new for dinner last night and it turned out really good. I made pasta and used cauliflower to make a healthy (and vegan) alfredo sauce. I boiled the cauliflower until it was very soft, put it in the food processor with a bit of margerine, and lots of garlic, basil and oregano. let it simmer for a while and pour it over the noodles.

    I love cauliflower, (LOVE) and think that this would be really tasty.

    It's funny that you posted this, (in a metaphorical sort of way). I saw another post about Butternut squash and it started me thinking that if you cooked it with lots of yummy things like onion and garlic and lots of pepper then you pueered and poured over pasta and finished with a little cheese, (or not) that it could be quite delicious.

    I love squash, I'll try that sometime, wouldn't it be funny to make a sauce with butternut squash and pour it over spaghetti squash?!! maybe too much of a good thing??
