Family Friendly Dinners

Hi Everyone.
I have many in my Family who "hate" the healthier foods I make.
I often will mix it up by making their favorites but switching it up by using ground turkey and getting more tuna in the house.
However, The Crockpot has really been my savior with the heat this summer.
This often leaves me with Condensed Soups. Stocks, Red Meat, etc when using it.
and although I don't mind that now and then it seems to be requested more and more by the Family.
soooooo- I would like to purchase some items for myself, but still be able to cook a meal for the family.
Any suggestions?!?

My WHOLE family likes baked chicken breast with either chargrilled or cajun spice sprinkled on, baked potato wedges, and my bf makes a lovely salad from sliced celery, cucumber, lettuce and onion and instead of dressing puts a little salt, pepper and vinegar.0

I use something called SOS (soup or sauce) mix instead of cream of chicken. It is a quick little mix with a lot less fat and calories. my kids and hubby seem to like it in casseroles and mac and cheese and crock pot recipes.

I also keep trying new recipes to feed us all. I am NOT cooking short order. So I add spinach to the mac and cheese, cook with whole wheat noodles, use beans instead of meat (everyone is really into black bean enchiladas these days). I have also found lower-calorie bread that the family likes, and some low-calorie low-carb tortillas everyone likes.
Another tricky thing I have done with dinner is started serving salad or another veggie (or both) and a fruit with the main dish every night,. My kids are eating more fruits and veggies, and I fill my plate with salad, veggies, and fruit before serving the main dish. It keeps my portions smaller .
Granted, I do save a lot of my calories for family meals, since this is when I (and they) like to eat. I also don't have my calories set so low that i can't eat like a real person (I aim for 1500-1700 net each day) but I will still lose between a pound and a pound and a half a week.
Some of our favorite meals lately:
Chicken spinach pie (with tortilla crust)
Baked oatmeal (for breakfast)
Beef with Broccoli in the crockpot
Mac and Cheese
Black bean enchiladas
Tacos
Spaghetti
Grilled chicken
Grilled pork chops and sweet potatoes
Baked potato bar (I load mine with veggies, kids love cheese)
Hamburgers/turkey burgers/veggie burgers (thin buns rock)0
