My thought would be, by cooking it longer, the rice absorbs more water -- so you end up with a higher volume of rice.
So what would be 1 cup of correctly cooked rice, is now 2 cups of overcooked rice. By the cup, the calorie count will be lower.0 -
I mean basically she is claiming if you add more water it reduces the calorie content. Essentially the way she is cooking it some of the extra water is going to evaporate as it does when you cook it with the proper amount of water but... I'm not sure if there is any truth to it.0

I refuse to believe that you could cook rice for twice as long as you are meant to and it wouldn't ruin the texture. In fact, even in the picture that rice looks a little mushy.0

surly you will cook the good nutrients out of it!0

More volume = less calories per cup.
It's just a trick to get you to think you are eating more rice than you are because it looks like more. The extra volume is just water.0
