I love muffins - but i want to make a healthy muffin that includes oatmeal, apples, blueberries and nuts. I keep finding recipes with bananas in them. I just can't do bananas.
I am a big veggie eater and would welcome any new veggie recipes too.

I use this one and add whatever fruit/veg I have on hand. Works well with grated apple or pear, grated carrots, berries, grated zucchini (squeeze dry),
1 1/2 cups flour
1 cup quick oats
1/2 cup packed brown sugar
1 tbsp baking powder
1/2 tsp cinnamon (I add more, I also add nutmeg, ground cloves and allspice)
1/4 teaspoon salt
1 cup milk
1 egg
1/4 cup vegetable oil
1 tsp vanilla
2 carrots, grated (or 1 zucchini or 2 small apples/pears or 1 apple/pear and 1 cup berries)
1/2 cup walnuts (optional) or raisins or shredded coconut
Whisk together wet and dry ingredients separately. Add wet to dry and fold together just until moistened throughout. Use paper muffin cups.
Bake at 375 F for 20 min.0 -
applesauce, pumpkin puree, or chick peas can all be subbed for the banana. And dont (typically) leave any taste.0
