The yummy ones! :P Just kidding. From the way that I understand it (and I'm bumping this to learn more!) there are good, ok, and bad. The good are nuts, fish, plant-based oils and such. The ok, are cheese and red meats and are fine as long as it's in moderation. Then the bad ones are the really really processed stuff like burgers, chips, and all the stuff we know we should try to stay away from anyways.0

The simplest way to think of it is that anything that is solid at room temperature is bad for you (aka Saturated-coconut oil being the only saturated fat that has huge debate over benefits vs downfalls). Any thing that is liquid at room temp is heart healthy in moderation. That's as far as actual fats (oils, butter crisco, bacon grease) goes.
As far as food it's pretty simple. Keep your diet as green and close to nature as possible and you'll be eating good fats. Keep away from the processed $#@# and you'll probably be able to avoid most bad fats.0 -
I've heard anything bought in a large plastic container is bad for you, but the stuff bought in glass is usually better. I know coconut oil is good and avocado, virgin olive, and grapeseed. The best way to know for sure would be to consult a nutritionist or go to a health food store and see what they have stocked on their shelves.0

Saturated fat being bad for you is an outdated theory. There is no need to avoid it.
Trans fats, yes you should avoid.

This pretty much breaks down the differences in fats and what makes them "good" or "bad"

"What Everybody Ought to Know About Fats"
Basically on a scale of the main types of fats from most stable and least oxidizing to unstable and/or easily oxidized (which is what causes artery inflammation and cardiovascular disease), Saturated--Monounsaturated--Polyunsaturated--Trans--Interesterified.
Yes naturally occurring trans fats can be beneficial but the majority of trans-fats that you will come across are artificially created and harmful0
