I made this today at summer camp with my group.
Ingredients:
3/4 cup of fat free half and half
3 teaspoons of sugar
1 teaspoon vanilla extract
Your choice of mix-ins (berries, coconut, etc.)
2 cups of ice
3 teaspoons of rock salt
Directions:
Mix half and half, sugar, vanilla extract, and mix-ins in a sandwich bag. Seal the sandwich bag.
In a gallon size bag, put in 2 cups of ice and 3 teaspoons of rock salt.
Put the sealed sandwich bag into the gallon size bag. Shake until ice cream is solid (about 5-10 minutes).
Tip: If ice cream does not solidify well, place in freezer for a few minutes.
One serving (1/2 cup) is about 110 calories, depending on mix-ins.
Enjoy! We had a ton of fun making it and eating it!

From Australia - what is half and half?
According to Wiki it is: "The name refers to the liquid's content of half milk and half cream even though its butterfat content is only about 12.5%."
So you could probably use an extra lite cream that has the same amount of fat.0
