what to do with not so ripe melons?

We've got a bunch of not so sweet honey dews. I understand that once they are off the plant, they won't ripen further.

So far have made melon granita, salad of melon, zucchini, cucumber, olives, red onion and vinaigrette, and a smoothie with banana.
Any other ideas?

Tips on selecting melons also welcome.

    No suggestions on using under-ripe honeydew-type melons, but I know how to pick a good one. This only works for honeydew types with smooth skin. Run your fingers lightly over the surface of the melon. If it feels slightly tacky, sticky, or waxy it's a sweet one. If it feels smooth like a bowling ball it's not going to be sweet. It's a subtle difference but once you get the hang of it, it almost always works.

    Canteloupe type melons with the rough skin should smell ripe - sweet and cantaloupy. If they don't smell - don't buy them.

    Thanks for the tips, guys. The melon salsa recipes I googled seem to be more strongly flavoured versions of the salad my hubby made on weekend from a newspaper recipe
