Apples & Cinnamon Quinoa Breakfast
Its a high of 73 degrees here in Atlanta, GA today which is very unusual for August! So this is putting me in the mood for fall weather & fall recipes. Fall just reminds me of comfort - warm food, boots, blankets & football! I found this on skinnytaste.com and thought I'd share....
Apples & Cinnamon Quinoa Breakfast - Serves 4
Servings: 4 • Serving Size: 1 bowl (1/4 of recipe) • Old Points: 6 pts • Points+: 8 pts
Calories: 316 • Fat: 8 g • Carbs: 53 g • Fiber: 6 g • Protein: 9 g • Sugar: 20 g Sodium: 35 mg
Ingredients:
- 1 cup quinoa (rinsed)
- 1 1/2 cups water
- 1 tsp cinnamon + extra for sprinkling
- 2 tsp's vanilla extract
- 1/2 cup unsweetened applesauce
- 1/4 cup golden raisins
- 1 cup warmed fat free milk for drizzling (non-dairy milk works too)
- 1 gala apple - peeled & diced
- 1/4 cup pecans - chopped
Combine quinoa, water, cinnamon & vanilla in small sauce pan and bring to boil. Reduce to simmer & cover and let cook for 15 minutes until quinoa can be fluffed with a fork.
Divide quinoa between 4 bowls then stir in applesauce & raisins. Pour in warmed milk. Top with apples, pecans & a dash of cinnamon. Serve & enjoy!
Now doesn't that just sound so comforting for the upcoming fall season?!

Special K just came out with these ready to go in a few flavors- they are really good! Wish I could actually eat them more often but alas my doc says PCOS makes me unable to eat even quinoa regularly0
