Skinny Mini Cookies&Cream Cupcakes (Only 26 calories each!)

These came out tasting like chocolate chip muffins but hey they tasted amazing so who cares right!
Yield: 56 cupcakes
Ingredients
1/2 box Yellow Cake Mix (I used Pillsbury Traditional Yellow cake mix)
2 egg whites
3/4 cup water
1 6 ounce container vanilla yogurt (I used Dannon Light & Fit Nonfat Vanilla Yogurt)
1 tsp vanilla
9 milano milk chocolate cookies (could substitute with oreos, whonu cookies, or just chocolate chips)
Instructions
1. Preheat oven to 350 degrees.
2. Using cupcake liners, line two mini muffin pans with cupcake liners and set aside.
3. In a stand up mixer or using a hand mixer, mix dry cake mix, vanilla, egg whites, yogurt, and water until well mixed.
4. Crush up cookies and stir into batter
5. Using a spoon, evenly fill cupcake liners with cake batter.
6. Bake for 14 minutes or until toothpick inserted in the center of cupcake comes out clean.
and thats it! I loved them! Probably had like 3 right out of the oven

I saw the topic and was like 'WHAT? CUPCAKES WITH ONLY 26 CALORIES?'
My friend and I were going to bake low fat apple-sauce brownies next week but I think this will be a much better recipe to try. Thanks for posting it!0 -
