Cheesy Zucchini Wedges

Heat oven to 375F. Cut zucchini in half lengthwise and brush with olive oil. Sprinkle with cheese blend and minced garlic. Add roma tomato slices and remaining cheese. Bake 30 minutes and serve with ranch.

    I think so, yeah, I don't watch carbs but it's just veggies and cheese so yeah!!

    This is one of my absolute favorites!! Especially when I have a pizza craving :) I skip the olive oil and slice a second time for thinner pieces. I bake the slices first alone with seasoning for about 10 minutes, add a light layer of pizza sauce, then my cheese and toppings and continue baking until done. You won't regret either version of this recipe if you like zucchini :)

    I just figured out what we're having for dinner tomorrow! We have an abundance of zucchini and tomatoes from the garden so this is PERFECT! Thanks for the great idea :)
