    I'm in love!!!! I love salads but hate traditional "chopped salads." I don't like raw onions or raw tomatoes. So, I'm always struggling to get something new. As you'll see below, I especially love fruit in my salads. My personal favorites (before seeing this amazing list) are:

    Make a vinegarette of equal parts olive oil, apple cider vinegar, and maple syrup. Add salt and pepper and a dollop of dijon mustard. Shake to combine and use to dress one of the following.

    1) Julienne kale and toss with lemon juice. Let sit for 10-15 minutes to soften the leaves. Meanwhile, add 1/4 cup of raisins or craisins to the dressing and allow them to absorb some liquid. Dump the raisin and dressing into the kale and toss. Top with sliced almonds.

    2) Cook 1-2 slices of crisp bacon and crumble. Toss with your favorite greens, zante currants, and chickpeas. (Even better with these chickpeas: http://peasandthankyou.com/recipage/?recipe_id=6000540 )

    Or, with an asian dressing (I like Trader Joe's Sesame Ginger Vinegrette):

    3) Use a crisp lettuce variety, add chopped chicken breast, shredded carrots, sesame seeds, peanuts or almonds, and crisped lo mein noodles. (I usually leave the noodles out because I don't want to buy them, but the salad is served this way at the restaurant I "stole" this from. You could also use cold soba or rice noodles if you like.)
