Cooking for one

Anyone have any good, easy recipes or plans for cooking for one? It is so hard to come up with things that I can make in small portions or that I don't mind eating the leftovers for a few days! Help!

    There is an option to adjust the recipe for 1 serving. It also calculates the nutrition info.

    Hi! I make a lot of grilled veggies/veggie kabobs, and keep them on hand as a side for any night of the week.

    I eat a lot of chicken breasts and lean pork chops. It's easy to cook one or two each night...

    The crockpot is a savior, too. Once I put a whole chicken in it with nothing but spices, and it came out so tender and juicy....

    I love the good ol staple of a chicken breast with salt and pepper and a little olive oil with rosemarry! mmm add some steamed broccolli and you are set! mmm =) thats what i'm having tonight.

    Got a freezer? On your day off make up 3-4 different entree items that will make 4 servings. When done portion them out in some of those plastic disposable containers. Toss in some frozen vegies, maybe some rice, or what ever else you would use to make a meal of it. Put them in the freezer. Ready to go healthy "TV dinners". After doing that for a couple weeks you have quite a variety of entrees to select from. I always have baked plain chicken breasts in the fridge to use in salads, sandwiches, pasta dishes or just plain with some salad dressing for dip. Cooking for one is a pain.
