Mac n cheese from scratch (assuming you aren't using expensive cheeses)
Oodles of noodles
Frittatas
Scrambled Eggs
Fried Rice

Some of my cheap staples:
Mrs. T's perogies (very comforting and versatile, but low in calories) I sometimes eat them with marinara, but sometimes I'll add cheese and salsa for a mexican twist) Also very good with sour cream and caramelized onions that I make in the crockpot. (recipe below)
Crockpot Caramelized Onions - These are super versatile. You can add them to eggs in the morning, a salad in the afternoon, and perogies/chicken/steak at night. So yummy and super cheap. I haven't tried freezing them, but I bet it would work.

For a sugary treat- get some bananas that are really ripe, peel them and cut them up. Put them in the freezer and when you're ready, throw them in the blender and add whatever mix-ins you want. You could have them plain though, but I like to add peanut butter, or cocoa and stevia.
Here is my favorite site that has a lot of crock pot recipes:

The only one I've personally tried is the crock pot picadillo and it was delicious. I froze a couple of the recipes for my sister (she's expecting a baby soon) They all looked and smelled really awesome while I was putting them together. It was the chicken taco chili and the tortilla soup.
I also recommend writing to your favorite healthy food companies and requesting coupons. A lot of times they will send you a lot of excellent, sometimes completely free, coupons and I've even received samples. Muscle milk was particularly generous.
Good luck!0 -
Potato, black beans, salsa
