I do this one frequently!!!And I add some of the crystal light lemonade packets to some lite or fat free cool whip (depending on how strong you want the flavoring) and use that as my frosting.

Have you tried the weight watchers recipe, I box spice cake and 1 can pumpkin. I make it in a muffin tin and it is tasty cupcakes for the week.0

I make use cool whip and a tiny drizzle of chocolate syrup for frosting....really yummy can't tell it has yogurt in it either0 -
I made this the other day... chocolate zucchini bread. I was amazed. It was better than chocolate cake! You can use it for cupcakes as well, so moist and delicious!! You can substitute the oil for applesauce like someone else mentioned. Try it!

If I am in a rush (can't make my own recipe) I use the box and replace the egg with 2 egg whites and the oil with applesauce.0

I think angel food cake is the best choice. I too love the Angel food cake box mix mixed with 1 can of crushed pineapple in it's own juice, cooked as directed (as previously posted). For my husband's birthday this year, I served angel food cake topped with strawberries & whipped cream instead of cake & ice cream...it was a winner!

Take any cake you currently make now and swap the oil for unsweetened applesauce. You cut the calories dramtically, and it actually makes the cake much more moist.0 -

So I made the suggestion of the cake mix & pineapple...haven't tasted it yet though
. But I have a question, I'm already at work and trying to enter the recipe while my empty can of pineapple is at home. It came up as 70 calories for the entire can, and I'm a bit skeptical about it...can anyone tell me if it is accurate or not?

Look up 5 min mug cake ... tonnes of different options out there, some are alot of calories, but supposedly 2 servings.... I treat myself to chocolate mug once in awhile. and make a nice little choc ganache to top it of.
can't eat it all, luckily.... but also no leftover cake to tempt me day after day : D0 -
If you really love them you might not like any low calorie / low fat versions.
So how about just making them a little bit smaller?

find a from scratch recipe you like, use only egg whites (no yellows- but use real eggs not the fake stuff), use skim milk if it calls for milk, for the oils, replace them with applesauce or use something healthier like coconut oil (will still be caloried dense but this makes a cake really moist and delicious), and replace half the sugar with stevia (you need half of the regular sugar or your cake will have a terrible texture)
I personally just replace the oil or butter with coconut oil, use the skim milk and the egg whites- it still is not the healthiest thing ever because it is calorie dense, but I make sure I only eat one serving-- I cannot change mine too excessively because having a custom cake business where everything is made from scratch my family expects the best cake ever each and every time
eta: beat together fat free or light cream cheese with some fruit juice to use for frosting (and if you have some self control and can actually stop at eating one serving then you can also beat powdered sugar into your icing which makes it oh so good)0 -
take your favorite recipe:
replace the butter/oil with a puréed avocado
replace half the milk with applesauce (and/or banana, pineapple, other fruit - but those you will taste in the final cake)
replace the other half of the milk with skim milk
reduce the sugar by 2/3 (or replace with sweetener) it will be plenty sweet enough with the applesauce
replace half the flour with protein powder - casein protein works best
add water as needed to get the right texture
replace the icing with naufenthal cream cheese whipped with fruit juice
the cake will be denser, but still taste yummy. the macro profile will be much improved with higher protein and less carbs/sugar0 -

I actually recommend this recipe quiteeee highlythey're actually muffins, but they taste just as good as a cupcake!
