Thai-inspired Beef and Napa Salad

This can easily be adjusted to fit your druthers and can easily be done with a cheap, lean cut of beef.
Salt & pepper and sear or grill a piece of beef until brown but still rare. Allow to rest.
Make a dressing of rice vinegar, soy sauce, nam pla (fish sauce), grated ginger, sesame oil, and canola or peanut oil. Optionally, add crushed garlic, chili oil or red pepper flakes, chopped peanuts, etc.
Shred some napa cabbage and roughly chop some cilantro.
Put the dressing in a large salad bowl. When the beef is rested, cut against the grain into thin strips. Toss the beef in the dressing. Add the napa and cilantro and toss until everything is coated.
Serve.
