zuccini squash

need some good recipes. Dads garden just came in and i need some ideas besides frying.
also has anyone ever froze zuccini? how did you do it?

    Yes- It freezes very well! I just cut it or shredd it (this is good for bread) and then put it in plastic bags in the amount of recipes that I want to use it for. Then when I want to make something I can just take out one bag. and not have to thaw a whole bunch to break it apart.
    You can bake it with herbs and a little olive oil.

    try roasting w/ onions and herbs in the oven...kind of like you would roast butternut squash...mmmm so yummy !
  • I LOVE IT ON THE GRILL
    I also make it by sauting (canola oil 1 tsp) and fresh garlic and 1 small onion. I use yellow squash and zucchini together.

    This is one of my favorites.

    MEXICAN ZUCCHINI SOUP

    1 sm. onion, chopped
    1 1/2 tsp. butter
    2 c. chicken broth
    2 c. unpeeled, diced zucchini (2 sm.)
    1 1/2 c. corn kernels, fresh or canned or frozen
    2 tbsp. chopped green chilies
    1/2 tsp. salt or to taste
    1/8 tsp. pepper
    1 c. milk
    2 oz. Monterey Jack cheese, cubed
    Minced fresh parsley & nutmeg

    In a large saucepan, saute the onion in butter until tender. Stir in the broth, zucchini, corn, chilies, salt and pepper. Bring to a boil, reduce heat, cover and cook until zucchini is tender, about 5 minutes. Stir in the milk and stir until hot but not boiling. Remove from heat and stir in the cheese. Garnish with minced parsley and a sprinkling of nutmeg. Serves 4 to 6.

    My family does this but tosses in some diced tomatoes and simmer....top with low fat cheese....sooo good. With diced tomatoes already seasoned you can alter it depending on meals.

    I don't have a 'recipe', but I stuff zucchini quite often. Cut a strip in the top and scoop out center. Put in boiling water for about 2 or 3 mintues and then drain on paper towels.

    Cook rice, tomatoes, onion, and bit of cheese if you like. Really you can use anything. Sometimes I add tuna and tomatoes, tuna, capers, & bread crumbs.....whatever you want.

    Spoon filling into zucchini, then bake in oven for about 20 minutes at 190 deg.

    Sorry I don't have better information, but it's something easy you can experiment with and track calories,etc, as you add ingredients.
