Oreo Biscotti - AWW YEAH

WHAT YOU NEED:
- 18 Oreo Cookies, divided
- 1 cup sugar
- 1/2 cup butter or margarine, melted
- 3 eggs
- 2 tsp. vanilla extract
- 3 cups all-purpose
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- 6 oz. white chocolate, melted
MAKE IT!
Heat oven to 350F.
Coarsely chop cookies. Mix sugar, butter, eggs, and vanilla in a large bowl until well blended. Add flour, baking powder, and salt; mix well. Stir in coarsely chopped cookies. Divide dough in half. Use floured hands to shape each half into 8x3-inch loafs on a baking sheet sprayed with cooking spray.
Bake 25 to 30 minutes or until golden brown. Cool 10 minutes. Cut each loaf into 14 (1/2-inch-thick) slices. Stand slices on same baking sheet; bake 10 to 12 minutes, or until lightly toasted. Remove to cook completely on wire racks.
Dip 1 end of each biscotti in melted chocolate and sprinkle with finely chopped cookies.

Drizzle with melted chocolate.
I made these yesterday after buying an awesome oreo cookbook. You can make them higher/lower calorie depending on what ingredients you use and how big you cut the slices. A rough estimate is 130-170 calories each. The only thing I would do differently next time is use milk chocolate or dark chocolate instead of white. I'm not a huge fan.
