Birthday
OK So my birthday dinner is Sunday and being a nice Mom my Mother (who knows how hard I am working on this diet) wants to make me a nice desert that won't sabotage my efforts. Talk about a good Mom!!
Any ideas. I have a bunch of fresh picked apples I could use. I LOVE desert so I am not picky as long as it tastes decent and can quench my sweet tooth since I can't (and don't want to!!) eat half a grocery store birthday cake this year LOL!!

How about some Baked apples with cinnamon, a little bit of Brummel and Brown Spread, and some brown sugar? Top it off with a little drizzling of caramel. GREAT, now I"M craving something sweet!

Our current favorite is to slice strawberries, maybe add some raspberries or blueberries, or peach slices (any yummy berry or fruit). I then get out some of my nice big wine or margarita glasses and layer the fruit with vanilla fat free pudding. One pudding cup is under 100 calories but in the nice glass with delicious fruit it FEELS decadent! You can top it off with one small spoonful of light cool whip but I usually don't.0

"Healthified" Fresh Apple Cake
prep time:20 min
start to finish:2 hr 5 min
makes:20 servings
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 cup buttermilk
1/2 cup canola oil
2 teaspoons vanilla
2 eggs
1 1/2 cups Gold Medal® all-purpose flour
1 1/2 cups Gold Medal® whole wheat flour
1 teaspoon baking soda
1 tablespoon ground cinnamon
1/2 teaspoon salt
3 cups finely chopped unpeeled apples (3 medium)
1 cup chopped walnuts
1. Heat oven to 350°F. Spray bottom only of 13x9-inch pan with cooking spray.
2. In large bowl, beat sugars, buttermilk, oil, vanilla and eggs with electric mixer on low speed 20 to 30 seconds or until blended. Add all remaining ingredients except apples and walnuts; beat on low speed about 1 minute or until blended. Stir in apples and walnuts. Spread batter in pan.
3. Bake 40 to 45 minutes or until toothpick inserted in center comes out clean. Cool in pan on cooling rack 1 hour.
High Altitude (3500-6500 ft): No change.

(1 half-cup serving: approx. 40 - 45 calories, 1.5g fat, 93-103mg sodium, 6g carbs, 0.5g fiber, 0g sugars, 0.5g protein = 1 Point)
Pick your pudding pleasure! Chocolate Covered Strawberry? Vanilla Mango? English Toffee Coffee? Not only are these pudding snacks only 40 - 45 calories per serving, but you can create limitless flavor combos in five minutes. Top with some Cool Whip Free, or dip fruit in them while they're still warm. Yum!
Ingredients:
1 1/2 cups Unsweetened Almond Breeze; Vanilla, Chocolate, or Original
2 tbsp. cornstarch
2 oz. Torani Sugar Free Syrup (or another sugar-free syrup); any flavor
1 tsp. Splenda
Directions:
In a medium-sized nonstick saucepan, combine all ingredients. Stir well, and set stove to medium heat. Stirring constantly, allow mixture to reach a boil (approximately 5 minutes, depending on if Almond Breeze was previously refrigerated). Once mixture has reached a boil and thickened, remove from heat. Spoon mixture into three dishes and place in fridge until pudding has cooled and set (several hours). Makes 3 half-cup servings.0 -

I hadn't heard of hungry girl but I think I will check it out. I love to cook so finding new things to cook so I can still enjoy the kitchen is going to be key to my success.
