Meal ideas for busy university student!

Hi guys! I need help!

Monday and Wednesday are my long days (9-9) and I have maybe an hour or two break (one of which is in the car driving to the extension campus). I wanted to see if you have ideas of meals that are super simple and healthy that I can pack for lunch and dinner!

    if you are so busy then eat a fruit and a protein shake.

    Bake a chicken in the oven with little oil and go and study.

    Boiled eggs seem to keep pretty well all day.

    How about freezing some greek yogurt. This will keep it cold enough to get through a few hours while you are in class and just open it up, stir it and eat it on the go. If that doesnt work, some Go-gurts.. those kid friendly yogurt tubes. Same thing, freeze them and eat on the go.

    Baked egg cups - ham or canadian bacon in the bottom of each cup of a muffin pan, scramble 1 egg for each cup, pour over the ham, top with a little cheddar cheese and bake until egg is cooked thoroughly, about 10 min or so at 350. You can make these the night before and store in a zip lock bag and eat as you walk or drive. VERY yummy, full of protein and a good grab and go food.

    Thanks for the link to the baked eggs cups! I have never thought about freezing greek yogurt! Thanks for the idea!
