vegetable soup

Im looking for a really tasty vegetable soup recipe that has heaps of veg in it. I basically need a good way to make it tasty so its not just vegies and stock?

I don't use a recipe, but here's what I use in mine...
I usually use chicken broth or stock, tomato juice, red pepper flakes, salt, pepper, garam masala and all sorts of veg - cabbage, celery, onion, garlic, cauliflower, broccoli, zucchini, squash...just about any kind of veg I can get my hands on really. I just play around with seasonings until it tastes good. I've used coconut milk before as well and some sweet curry powder, red chili paste.
I've also made it like a stew or chili using ground turkey and chili seasoning (Chili-o mix usually) and some hot chili powder.
I don't usually measure or anything I just throw it in a giant crock or cast iron pot and hope for the best. Usually turns out alright :-)0 -
ahhh here is the recipe I used to make veg soup...I just adapted this hot and spicy braised peanut chicken recipe. Basically you can leave out the chicken and peanutbutter and the quick cooking tapioca (which is to thicken the sauce). I always adjust seasonings too. So added sweet curry powder to it as well. And of course a ton of veg.
