need a quick easy vegetarian packed lunch recipe!

hi everyone!

i need a quick and easy packed lunch recipe for tomorrow...
here are my conditions:
- it has to be vegetarian
- i have bread, cheese, tofu, salad stuff, fruit, greek yogurt and a few other things in my fridge
- it has to be YUMMY and ~500 cals

all suggestions much appreciated!

    Ok...This was my staple lunch twice a week for a year (while I was a vegetarian)

    Take a whole wheat wrap
    spread it with 2 tbls. hummus (any flavor you'd like)
    top it with 1/2 cup of fresh baby spinach
    1/4 c. shredded carrot
    1/4 c. canned rinsed black beans
    1/4 c. sliced hearts of palm
    and douse it with hot sauce

    Roll it all up and go! You can get pretty creative with different ingredients like artichoke hearts and different flavored hummus. I add hard boiled egg when i want a protein punch

    Use the yogurt, fruit, and tofu to make a smoothie. Since tofu is essentially flavorless, it will add the protein you need to keep yourself full for the rest of the day without ruining the great taste of the smoothie! If you need some solid food to go with it, pack a small salad to go with it.
  • Cold grilled cheese (unless you have a toaster oven or something at your lunch destination) and a side salad? If you have some tomato or veggie soup in the pantry even better. And a peice of fruit.
