Spaghetti Squash

I am trying a new recipe that calls for spaghetti squash. I am cooking for just myself and will not be here to be able to use the leftovers. If I cut the squash in half can the unused half be frozen to be used later?

Yes, squash keeps best if you cook it first. I would prepare the whole thing while you are making your recipe and then just scrape it out of the skin, put it in a zip lock bag or freezable container and pop it in the freezer. Mine is currently full of squash for later.0

Yes definitely cook the whole squash before freezing and I recommend spicing up the half you're freezing for later use as a side dish with pork or veggie stir fry.0
