Easy Breakfast Idea - Mini Egg Muffins
I am new here not sure if this has been posted but I do this weekly 
Start with 12-14 Eggs ( you can just use the egg whites if you prefer)
In a bowl scramble eggs well.
You can add 2-3 of the below to your own preferred taste
1/2 cup cooked turkey sausage
1/2 cup low cal cheese
1/2 cup canadian bacon
1/2 cup green peppers
1/2 cup tomatoes
1/2 cup salsa
You get the idea, the possibilities are endless. Once you have all ingredients mixed well in bowl, use a 12 cup cup cake pan. Spray well with canola oil. Pour each cup 1/2-3/4 full. Bake at 350 degree for 15-20 minutes. Watch the first time, depending on your oven temperature. Once these are cooked all the way through. Remove from oven, cool for 5 minutes and flip out of pan. Instant breakfast for several days. I will let these cool completely and keep in a ziploc bag for 3-4 days all week. Just warm up and it is a great lo-cal snack or breakfast on the go

I made these and my experience was..less than pleasant. I'm not a HUGE egg fan to begin with, but they got kind of an off taste after a few days of being frozen. I'm not sure how long you're supposed to be able to keep them, either, but mine started to turn a brownish-green so I tossed 'em and ultimately it was a waste of time/ingredients. I much preferred the oatmeal breakfast cupcakes from chocolatecoveredkatie!0

He didnt mention freezing them but to put in a ziplock baggie an put in the fridge!! will be trying these out cause cooking in the mornings is a real pain in the you kno where!! lol so with these it would be just pop them in the microwave for a few seconds and There are Go!! :happy:
I eat a LOT of eggs and my sister has been having a fit that it is SO unhealthy but my bad cholestrol has gone down and my good has gone up since I started exercising!! not sure how the poor innocent egg got such a bad rep!!! The choline alone is worth eating more eggs!!0
