Beets

I had no idea what to pair with my shepard's pie for dinner and then I saw beets in Shape magazine! Cooked for about 1/2hour at 400 degrees they came out delicious with the skin on, a little olive oil, black pepper and garlic powder :) They are full of nutrients as well!

Anyone have any other good ideas for veggie sidedishes?

  • Any kind of tomatoes sliced-put on cookie sheet, sprinkle a little olive oil on them with some type of seasoning (i.e., italian seasoning), bake at 350 degrees for 20-25 minutes. Enjoy!

    We love fresh sliced zuccini stewed with fresh chopped tomatoes (both out of the garden) and a little onion and seasoned with black pepper, lite salt and torn up fresh basil leaves . It tends to be a bit on the liquid side but makes a great side dish or even a quick lunch! We have to make the most of the fresh summer veggies while they are still available....
  • boil 2 c.cauliflower with 2 cloves of garlic.. about 20 mins till very soft..mash and add a small amount of warm milk and a pat of butter. They end up like a creamy garlic :flowerforyou: mash potato but very low cal and delish.

    I would be intimidated by fresh but I will attempt them sometime! thanks for sharing!
  • you're welcome!! they're not too scary ;) haha you just need to clean them very well and i like to slice them into halves.

    some more faves of mine:
    asian inspired snow peas steamed with black sesame seeds, sesame oil, ginger, garlic and soya sauce
    the beet greens and stems panfried with garlic and olive oil
    personal fave: rapini with lots of garlic and some olive oil
