Cook Ahead Breakfast?

Hey everyone! I've recently started to attempt to make meals on my day off (Monday) for the week ahead. I work really long days, and that prevents me from feeling motivated to cook.Breakfast ideas would be great, since I never ate it in high school or college. I really usually stick to cereal, which isn't super great for you, and the cereal that I like isn't all that filling, either. I'm lactose intolerant, but I use lactaid milk/soy products, and have a butter replacement that can be used if needed.

    I cook my breakfast ahead for the week. It's a dairy-free frittata. The recipe, if you can call it that:

    Saute in an oven proof skillet (I use cast iron):
    - olive oil
    -1-2 sweet onions (cut into strips)
    - 1 red pepper ( also cut into strips)
    - 1 package of slice baby Bella mushrooms
    Add:
    - 1 breast from a rotisserie chicken, shredded
    - salt and pepper to taste
    In a bowl, beat:
    - 10 eggs, with a splash of water and salt
    Pour the eggs over the veggies and chicken
    Move the pan to a preheated 350° oven for 30 minutes

    Cut into 5 wedges - each wedge is about 230 cals, and full of protein. I heat it for 1 min in the microwave, and love it. It's also good topped with avocado, or with added cheese if you want a higher calorie meal.
  • I also made a similar breakfast. Egg "muffins".

    Heat oven to 350, lightly spray a muffin pan with cooking spray. Beat 12 eggs in a bowl and add in whatever veggies you like. I used tomatoes, onions and spinach. Pour evenly into the muffin cups and bake 25 min. I plan on eating two at a time for breakfast. Very quick to make and I made mine using no milk at all. :)

    I usually bake some healthy muffins, granola bars, etc. in advance. You can freeze what you won't eat within a few days and defrost the night before.

    I make eggs. I will only keep them in the fridge 2 days though.

    Smoothies- I chop ingredient and freeze half and fridge the ones that won't get gross like strawberries.
    I think combine frozen ingredients with diced strawberries, and orange juice. Yummy!

    I often cook a large pot of Bob's Red Mill Steel Cut Oats. I forget how many servings one package makes, 4 days worth or so. I keep in the fridge, heat up a serving with a little water, add a chopped apple, and it makes a great breakfast. Takes less than 5 minutes to heat up and add the apple.

    I cook up a bunch of 2 egg omelettes at once and put them on bagel things with cheese and bacon. Throw them in the freezer until I want one and then I just pop it into the microwave at work.

    Breakfast Burritos are an easy one to do. Saute an onion and one red pepper and one green pepper (chopped) in some olive oil. Then once those are tender, remove and brown up some lower fat turkey sausage. Then once that is browned up, cook up a cartoon of scrambled eggs. Once everything is cooked, mix it all together in a large bowl. Divide evenly among 12 tortillas. Top the filling with a tablespoon of shredded cheese and then fold up the burrito. Wrap in parchment paper, and then in almuminum foil and place in a ziplock freezer bag.

    Then in the morning just grab a burrito, remove the foil and nuke for 2 minutes.

    Do you have a slow cooker? I sometimes make breakfasts in there and wake up to a nice hot breakfast.

    I made mini frittatas today. It makes 6. Takes about 5 minutes to prepare, and 20 to bake

    You can also make pancake muffins, Use a cupcake pan (mine makes 6) Mix any pancake batter you want. Place cooked sausage, or bacon, or fruit into each cup,pour mix over, and bake

    Pinterest is a life saver for make ahead breakfasts, just search for them, and you'll have more options than you can shake a stick at.

    I like oatmeal made in the crockpot overnight. You can add walnuts, raisins, chopped apples etc. and it will be ready for you in the morning. Google "Oatmeal in the crockpot" and you will find lots of recipes.

    I've been eating crust less spinach quiche. I've added hot pepper cheese to it and liquid smoke for more flavor.

    I will make overnight oats, crockpot oats, frittata, or egg muffin cups.. I also make my own packages of oatmeal.
