I don't know much about Kvass, but my online search brings up mostly bread recipes. ? I do have the book "Nourishing Traditions". I don't agree with their stance on grain but there are some cool things in the book to get one started with fermentation. That's my current "to do", to learn how to ferment stuff and enjoy it. Cabbage will likely be my first experiment.

ha I just asked you in a previous post if you read it lol. I was thinking of using hers. The fruit ones don't involve bread, that's the traditional Russian kind.

Yeah, I had a laugh about that. I'm just into the research of fermentation, I haven't tried on my own yet, except making yogurt with a starter. Since I am trying to avoid dairy I need to head off in a different direction than yogurt. If I could get raw grassfed dairy, I would still make yogurt and kefir for my child but since I cannot I don't see the point. I'm very limited by ingredients. (I envy your location-must be coconuts everywhere!).
