Cheesy Cauliflower bake!

My Mom's cheesy cauliflower recipe, To die for!

1 cauliflower
3 tbsps butter
3 tbsps flour
11/2 cups skim milk
1/2 cup grated cheese ( I use lower fat cheese, like swiss or low fat mixed colby jack, any cheese works)
1/2 tsp salt
1/4 tsp pepper
1/4 cup of any kind of bread crumbs.

Cut up cauliflower into florets and boil in salted water for about 20 mins or until it is soft.

Drain and place in a casserole dish.

Preheat oven to 400

Make a roux .
Take butter and melt over medium heat and mix in the flour
Stir constantly you don't want it to burn!!
Once the roux is thick and becomes a paste it is ready..

Mix in the milk
Add salt and pepper
Add the cheese. Sometimes I use a little more if it doesn't taste cheesy enough ;)
Cook and stir until thick. (about 10 mins)

Pour sauce over cauliflower.

Sprinkle with salt and pepper

Top lightly with bread crumbs

Put in the oven for about 15 mins until bubbly :) Sometimes I will broil it the last few minutes to make sure the bread crumbs are toasted!

Although I don't know the exact calories I looked up a lot of similar dishes and came up with a middle ground.

It is so delicious, it taste like cheesy potatoes but it's not!!
