I LOVE football! GO TEXANS!!! but football food is a killer. Looking for healthy alternatives... Love nachos, anyone have a healthy nacho recipe? or other favorites? Thanks xx

I've made a lower calorie version with 93/7 ground beef, 1-2% cheese, lots of tomatoes, onions, and jalapeno peppers, and 0% Fage Greek yogurt. Cutting out the fat cuts the calories but you need good fat so it wouldn't hurt to serve it with some guac on the side. Just strictly weigh everything and portion control.
I have found that nacho chips are the trick though, because they really are all quite similar in terms of calories and nutrition. I'd say simply limit the number of those that you eat and make sure each one is very full of the good stuff.0 -
Yeah, just put some shredded cheddar cheese, cooked ground beef (I use 97% lean stuff, cooked with salsa or taco seasoning) and jalapenos and diced tomatoes on chips and broil until the cheese is all melty. Screw around with the portions until you get something you like that fits your day. Go crazy and put extra salsa and sour cream on top if it fits.
Eat, enjoy. Nachos are a lot "healthier" than people think. Meat, grain, veggies and dairy all in one snack? And corn chips are gluten free for that one no-gluten friend? Nigh perfect game day snack.0 -

I often serve cucumber or bell pepper wedges on the side as a healthy alternative to the chips. Just make sure you have healthy snacks available. For Sunday, I am making stuffed peppers. Some will be traditional (ground beef/white rice) and some will
be a healthier version with ground turkey and brown rice.

Yep, veg heavy, chip light for nachos. Sometimes we use no meat, just beans and veg with the other normal stuff. Or sometimes well-seasoned turkey or lean beef/turkey mix. Greek yogurt is a really good sub for sour cream - we've been doing that just because we like it.
For wings, marinating and then baking at a nice hot temp (give them a while) is a good option. Get them nice and crisp and they are awesome....my husband and his family prefer mine over fried because they are fantastic! lol
But if you want, you can always cut up boneless skinless breast and do the same thing. Wings are still wings. Depends on what fits your day.
Oh, sorry - ETA: Also a layered dip with all the nacho stuff and is good, too. Zucchini chips, maybe? Or a lighter version of store-bought chips - those baked veg ones or Special K crisps?0 -
